This is the third single varietal Estate Cabernet Sauvignon from Stone Tower. We only grow so much of the varietal, and we use much of it in our Hogback Mountain and some in our Reserve Cabernet Sauvignon. This single varietal is not unlike our reserve wine in that it is over 90% Cabernet Sauvignon and finished with a touch of Petit Verdot. The wine is sumptuous, on the nose – the fruit is robust with wonderful notes of raspberry, black cherry and a touch of strawberry jam. On the palate the fruit explodes and we experience a touch of smokiness. The wine has a beautiful lingering finish with medium tannin. From the nose through the finish, we experience a graceful yet exuberant wine. The use of oak on this wine rounds the tannins and adds a touch of vanilla that lingers long after the sip. This is a perfectly balanced wine to be enjoyed with grilled and roasted meats as well as pasta and wild game. It will pair with a wide variety grilled vegetables. If you are a cheese eater, try the wine with shaved parmesan, or some very sharp cheddar. The wine is age worthy – very enjoyable now but as you wait – it will deepen and soften over the next seven to ten years.
