Throughout our history, most of our finest Cabernet Sauvignon is reserved for Hogback Mountain, our Left Bank Bordeaux style blend. The 2021 vintage is a superb example of this single varietal. The wine is self-assured and has striking aromas of roasted figs and morello cherry. There is also a hint of chocolate mousse, clove, and eucalyptus. It has astonishing grace and balance on the palate, and we experience the cherry and fig. As the wine finishes, we see a hint of chocolate and eucalyptus. This wine is multidimensional with incredible nuance. In the French wine world, they say “vin de garde” (wine for laying down) when the wine is age-worthy – although very enjoyable now, this wine will show increasing nuance and soften over the next ten years.
