Close your eyes, and you are in the Pessac-Léognan region of Bordeaux. This wine is stunning and incredibly similar to those deep, rich, full, round Sauvignon Blancs produced in that region. On the nose, this wine has a pronounced aroma of white peach. On the palate, you experience that same white peach and also lime, green apple, and passion fruit. The eight months spent in a combination of new and used oak enhance the richness of the wine and underscore the fullness found on the nose and palate. This wine will pair beautifully with a wide variety of meat – chicken and pork, fish – sole, trout, cod, halibut. Cheese, like softer briny and sour cheeses like Goat’s milk cheese.
