This is the second single varietal Estate Cabernet Sauvignon from Stone Tower. Historically, we have reserved our Cabernet Sauvignon to be used in our Left Bank Bordeaux style blend: Hogback Mountain. This single varietal is 100% Cabernet Sauvignon (it must be 75% to be considered a single varietal). The use of new French oak adds sumptuous notes of clove and cedar to this wine. Having spent 18 months in a combination of new and neutral French oak the wine has developed lovely round texture. On the nose, the fruit is robust with wonderful dark fruit, the palate is graceful and has hints of blackberry as well as a slight bit of chocolate. The oak accentuates the long caramel-like finish.
This is a perfectly balanced wine to be enjoyed with grilled and roasted meats as well as pasta and wild game. The wine is age-worthy, enjoy it now or wait and it will deepen and soften over the next seven to ten years.
